Texas Angel Cake Recipe

With Orange Sauce

A pretty two color Angelfood Cake. Half of the batter uses the egg whites, while the other half uses the yolks, creating a beautiful two toned Angel Food cake. I served it here with an orange sauce (recipe below).

Texas Angel Cake Served with Orange Sauce

White Layer

6 Egg whites
1/2 tsp Cream of tartar
1/2 cup Cake Flour
1/2 tsp Vanilla extract
3/4 cup Granulated sugar
Dash Salt

Yellow Layer

6 Egg Yolks
3/4 cup Granulated sugar
3/4 cup Flour
1/4 cup Boiling water
1 tsp Lemon extract
1 tsp Baking powder
Dash Salt

Oven Temp ~ 275 - 325°
Baking Time ~
Pan Type ~ 10 inch tube pan
Preheat oven to 275 F.

White Layer

Beat egg whites with pinch of salt on a large platter with a flat wire whisk. When foamy, add cream of tartar and continue beating until eggs are stiff enough to stand up in peaks, but not dry. Sift flour and sugar together four times. Fold flour mixture into egg whites, 2 tablespoons at a time, until all is used. Fold in flavoring. Pour batter into very large ungreased angel food pan.

Yellow Layer

Beat together egg yolks, sugar and pinch of salt for 3 minutes. Add baking powder to flour and sift four times. Fold flour and water alternately into egg mixture. Add lemon extract carefully. Place this mixture lightly by spoonfuls on top of white mixture. Bake Texas cake in slow oven for at least one hour. Begin at 275 degrees F, and then after 50 minutes increase heat to 325 degrees F. Remove Texas angel cake from oven and invert pan until cool.

Orange Sauce

Peel and cut 3 oranges into small pieces, place into a medium sauce pan and add 1 cup of sugar with 1 Tablespoon of cornstarch. Bring to a boil and continue to boil until liquid becomes clear. Boil for 1 minute longer and then remove from heat and let cool before serving. To serve, spoon orange sauce over each Texas Angel cake slice.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

When Mixing Cake Batter:

You cannot over beat the eggs, sugar and butter, but you can over beat the flour. If you do, gluten will form and you will be making a quick bread instead of layer cake. Beat the flour just until there are no visible signs of dry flour, but not until the batter is completely smooth.

Cake Flour:

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
