Hidden Cherry Ring Cake Recipe
Easter morning is full of surprises. This year, add Hidden Cherry Ring Cake
to the list. The Hidden Cherry Ring Cake is flourless and with its bright red filling, makes a lovely addition to any
Easter breakfast or brunch table.

2/3 cup

Granulated sugar
Milk
Butter, softened
Eggs
Cherry pie filling
Powdered sugar, if desired

Preheat oven, generously grease cake pan.
Mix all ingredients except pie filling and powdered sugar with fork; beat vigorously for 30 seconds.
Spread 2 cups of the batter evenly in bottom and about 2 inches up side and
center of pan. Spoon pie filling evenly onto center of batter. Spoon
remaining batter by teaspoonfuls about 1/2 inch apart onto pie filling. Bake
about 30 minutes or until golden brown. Cool 10 minutes. Invert onto
heatproof serving plate; remove pan. Cool cake completely; sprinkle with
powdered sugar.
No-Cholesterol Hidden Cherry Ring Cake: Substitute skim milk for the milk
and 3 egg whites or 1/2 cup cholesterol-free egg product for the eggs. Use butter.
