Taste this Mississippi Mud cake recipe with the good taste of coffee. Wow, Mississippi Mud Cake, the rich taste of both espresso and chocolate. You won't need to go out for coffee with this cake in the house. Two of my all time favorites in one cake.
2 cups Unbleached All-purpose flour
2 tsp. Baking soda
1 tsp. Salt
1 cup (2 sticks) Unsalted butter, cut into pieces
6 oz. Unsweetened chocolate, chopped
1/2 cup Brewed espresso or strong coffee
1 1/2 cups Sugar
1/2 cup Bourbon
4 Large Eggs
2 tsp. Pure vanilla
6 Tb. Unsalted butter, cut into 6 pieces
6 Tb. Packed light brown sugar
2 tsp. Instant espresso powder
6 Tb. Heavy cream
1 1/2 cups Confectioner's sugar, sifted
2 Tb. Bourbon
Oven Temp ~ 350°

Pan Type ~ 12 - cup Bundt cake pan
Combine the flour, baking soda and salt in a medium mixing bowl.
Combine the butter, chocolate and espresso in a medium saucepan. Stir over low heat until the chocolate and butter have melted. Remove the pan from heat. Add the sugar and bourbon, stir with a whisk until the sugar has dissolved and the mixture is smooth.
Place the eggs and vanilla in a large mixing bowl and mix with a wooden spoon or electric mixer on low speed. Gradually beat in the chocolate mixture. Add the flour mixture and stir. Pour the batter into prepared pan and smooth the top with a rubber spatula.
Bake Mississippi Mud cake until a toothpick inserted in the center of the cake comes out clean. Let the cake cool in the pan for about 5 minutes, invert it onto a wire rack; then turn Mississippi Mud cake right side up on a rack to cool completely.
Turn Mud Cake out onto a wire rack set over a baking sheet. Drizzle glaze over the cake, allowing to run down the sides. Let the glaze set for 30 minutes.
