1/2 cup Shortening
2 sticks Butter
2 3/4 cups Sugar
3 1/4 cup All-purpose flour
1 tsp Baking powder
1/4 cup Milk
3/4 cup Crushed pineapple (with juice)
1 cup Flaked Coconut
1 cup Chopped pecans
1 tsp Vanilla
Oven Temp ~ 325°
Baking Time ~
Pan Type ~ Bundt pan
Cream the shortening, butter and sugar; then add eggs and mix well. Combine sifted flour and
baking powder together. Combine mixtures alternately with milk. Stir in the
pineapple, coconut, pecans and vanilla. Blend well. Pour Special Bundt Cake batter into tube or Bundt pan. Bake your special cake.
Special Bundt Cake can be topped with Coconut Pecan Frosting, before turning out of pan.
