Apple Spice Cake Recipe
From a Cake Mix

Apple Spice Cake combines maple flavored spice cake with a sweet apple filling. Moist and delicious like an apple pie cake

Vegetable oil spray for misting the pan.
Flour for dusting cake pan.

1 Pkg Plain Spice Cake Mix
1 Cup Whole Milk
8 Tb or 1 Stick Butter, melted
1/3 Cup Vegetable Oil
3 Large Eggs
2 tsp Maple Flavoring

Apple Spice Cake Filling:

1 Large Apple, peeled and sliced
1/4 cup Light brown sugar, packed
1/2 tsp Ground Cinnamon Spice
2 Tablespoons Melted Butter

Oven Temp ~ 350°
Baking Time ~ 43 to
Pan Type ~ 12-cup Bundt pan
Preheat the oven, spray pan with non-fat vegetable spray and dust with flour. Shake out the excess flour and set the pan aside.

Place the cake mix, milk, butter, oil, eggs and maple flavoring in a large mixing bowl; with an electric mixer set on low, beat until ingredients are just combined. Increase the mixer speed to medium and beat for 1 to 1 1/2 minutes or until the mixture is smooth. Pour half of the spice cake batter into the prepared pan and set pan aside.

Place the apple slices, brown sugar, cinnamon spice and melted butter into a small mixing bowl, stir to combine. Spoon the apple mixture on top of the spice cake batter in baking pan. Turn the remaining batter on top of the apples and with a rubber spatula, spread the batter and smooth the top. Place the pan in the oven.

Bake Apple Spice Cake until the top springs back when lightly pressed with your fingertips. Remove the cake from the oven and place on a wire rack to cool for 20 minutes. As the cake cools in the pan it will fall 1 inch. Run a knife around the edges of the cake and invert it onto a serving plate. Dust the top with confectioners' sugar or drizzle with your favorite caramel syrup or icing. Slice and serve Apple Spice Cake while it's still a little warm.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

When Mixing Cake Batter:

You cannot over beat the eggs, sugar and butter, but you can over beat the flour. If you do, gluten will form and you will be making a quick bread instead of layer cake. Beat the flour just until there are no visible signs of dry flour, but not until the batter is completely smooth.

Cake Flour:

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
