Chocolate Ho-Ho Cake Recipe

Remember those Hostess favorites we had as kids, well mine was the Ho Ho Cakes. I just loved those little chocolate cakes with that creamy filling and dipped in chocolaty fudge.

1 box Moist chocolate fudge cake mix
1 cup Sugar
2/3 cup Vegetable shortening
1/2 cup Butter
5 ounces Evaporated milk
2 tsp Vanilla extract
1 can Chocolate frosting

Pan Type ~ 9 x 13-inch pan
In a 9 x 13-inch cake pan, prepare cake mix as directed on package. Bake as per box directions. After baking; chill cake thoroughly.
Prepare filling mixture by creaming the sugar, shortening and butter together. Stir in evaporated milk and vanilla. Cream until light and fluffy. Spread over chilled ho-ho cake. Refrigerate until set.

Melt chocolate frosting in microwave for 30 seconds (until runny). Pour over cake and spread. Let chocolate ho ho cake set in refrigerator until ready to serve.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
