Why have a plain yellow cake when you can add a few ingredients and voila! Create one spectacular taste sensation. We added Mandarin oranges and crushed pineapple along with the added texture of a cheesecake mix; creating a Pineapple Orange Sunshine Cake that is cool and refreshing.
1 package Yellow cake mix
1/2 cup Salad oil
1 (11 oz.) can Mandarin oranges, un-drained
1 (20 oz.) can Crushed pineapple, un-drained
1 Tb. Sugar
1 (10 1/2 oz.) package Cheesecake mix (Royal or Jell-O) *
1 (8 oz.) Sour cream
1 (9 oz.) container Cool whip, thawed
* save graham cracker mix for another recipe later.
Oven Temp ~ 325°
Baking Time ~ 15 -
Pan Type ~ three 9 inch cake pans
Combine cake mix, oil, eggs and oranges. Mix at medium speed of electric mixer 1 to 2 minutes or until almost smooth. Spoon into prepared pans, bake until done. Cool cake in pans for 10 minutes; remove from pans and cool completely on wire racks. Spread frosting between layers and on top and sides of cake. Store Pineapple Orange Sunshine cake in refrigerator.
Combine pineapple, sugar, filling from cheesecake mix and sour cream; stir until mixture thickens. Fold in whipped topping, mixing thoroughly.
