Ripe bananas means time for baking and when I want a delicious, quick weekday dessert, Chocolate Banana Cake is what I turn to. It combines the sweetness of ripe mashed bananas with melted dark chocolate. To make it even more delicious, the banana cake is frosted with a smooth and fluffy white frosting.
1/2 cup Margarine, softened
1 1/4 cups Brown sugar
3 squares Unsweetened chocolate, melted
2 cups All-purpose flour
1/2 tsp Baking soda
1/4 tsp Salt
1 tsp Baking powder
1 1/2 cups Mashed, ripe bananas
1/2 tsp Vanilla
Oven Temp ~ 350°
Baking Time ~ 15 -
Pan Type ~ Three 9 inch round pans
Cream margarine and brown sugar until
light and fluffy. Add eggs one at a time. Beat thoroughly after each
addition. Stir in the cooled melted chocolate. Sift dry ingredients together, then add
to the batter alternately with the mashed bananas, stir in vanilla.
Pour Chocolate Banana Cake batter into prepared pans. Bake banana cake until cake tests done. Frost with a fluffy white frosting.
