Chocolate Buttermilk Cake Recipe

Chocolate Buttermilk Cake with my famous coffee blend.

I just made the most amazing buttermilk chocolate cake ever! And truly, it was not hard at all. Moist, rich, chocolaty, not too sweet and with just the right amount of depth and complexity.

4 squares Baking Chocolate
1 cup Butter
2 1/4 cups Granulated sugar
1 1/2 cups Buttermilk or sour milk
3 cups Sifted cake flour
1 tsp Baking soda
1/2 tsp Baking powder
1/2 tsp Salt
5 Large Eggs, separated
1 tsp Vanilla

Oven Temp ~ 350°
Baking Time ~ 30 -
Pan Type ~ Three 9 inch round pans
Preheat oven, grease and flour the cake pans.

Melt the baking chocolate over simmering hot water, add melted chocolate to the butter and sugar, cream together well. Add buttermilk and flour which has been sifted together with the baking soda, baking powder and salt alternately, then add the well-beaten egg yolks and the stiffly whipped egg whites, lastly the vanilla. Mix thoroughly. Pour Chocolate Buttermilk Cake batter into prepared cake pans.
Bake buttermilk cake.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

Cake Flour:

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
