I just made the most amazing buttermilk chocolate cake ever! And truly, it was not hard at all. Moist, rich, chocolaty, not too sweet and with just the right amount of depth and complexity.
4 squares Baking Chocolate
1 cup Butter
2 1/4 cups Granulated sugar
1 1/2 cups Buttermilk or sour milk
3 cups Sifted cake flour
1 tsp Baking soda
1/2 tsp Baking powder
1/2 tsp Salt
5 Large Eggs, separated
1 tsp Vanilla
Oven Temp ~ 350°
Baking Time ~ 30 -
Pan Type ~ Three 9 inch round pans
Melt the baking chocolate over simmering hot water, add melted chocolate to
the butter and sugar, cream together well. Add buttermilk and flour which has been
sifted together with the baking soda, baking powder and salt alternately, then add
the well-beaten egg yolks and the stiffly whipped egg whites, lastly the vanilla.
Mix thoroughly. Pour Chocolate Buttermilk Cake batter into prepared cake pans.
Bake buttermilk cake.
