Chocolate Town Cake Recipe

Great Granny Vi's Chocolate Town Cake

, the creation of the Chocolate Town Cake is a delicate balance between the sweetened dark chocolate and the buttermilk. Frosted with stiff glossy dark chocolate Icing and topped off with a few vanilla spirals.

1/2 cup Hershey's cocoa
1/2 cup Boiling water
2/3 cup Shortening
1 3/4 cups Sugar
1 tsp Vanilla
2 Eggs
2 1/4 cups Flour
1 1/2 tsp Baking soda
1/2 tsp Salt
1 1/3 cups Buttermilk or sour milk
Cocoa Icing
6 Tb Boiling Water
1/2 cup Hershey's cocoa
1/4 cup Butter
2 tsp Vanilla
3 cups Powdered Sugar

Oven Temp ~ 350°
Baking Time ~ 25 to
Pan Type ~ two 9 inch cake pan
Preheat oven, grease and flour cake pans.

Stir together cocoa and boiling water in small bowl until smooth, set aside.

Cream the shortening, sugar and vanilla in large mixing bowl until light and fluffy.

Add eggs, beat well. Combine flour, baking soda and salt, add alternately with buttermilk or sour milk to creamed mixture. Blend in cocoa mixture. Pour Chocolate Town Cake batter into two prepared pans or an oblong greased and floured 9 X 13 pan. Bake until tester comes out clean. Cool for 10 minutes, remove from pans and frost with Cocoa icing.

* To sour milk: use 4 teaspoons vinegar plus enough milk to equal 1 - 1/3 cups

Cocoa Icing Recipe

Place water in a microwave safe container and bring to a boil.
Place butter in a medium size mixing bowl and pour boiling water over the top.
Mix until butter is melted, add the vanilla and cocoa.
Mix thoroughly, add the sugar, mix until smooth and desired consistency.

Spread on warm Town cake. This frosting stays soft for several days.

Yields about 2 cups icing.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

Cake Flour:

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
