No need for pudding in this cake because Evelyn's cocoa cake recipe turns out surprisingly moist and delicious.
1 cup Boiling water
3/4 cup Cocoa
1 1/4 cup White granulated sugar
1/2 cup Shortening
2 Eggs, separated
2 cups Sifted cake flour
1 tsp Baking powder
1 tsp Baking soda
1/2 tsp Salt
1 cup Soured milk or buttermilk
1 tsp Vanilla
Oven Temp ~ 375°
Baking Time ~
Pan Type ~ Two 9 inch round pans
Pour boiling water over cocoa.
Stir until mixture is smooth.
Cream sugar and shortening together.
Add egg yolks. Beat again.
Sift dry ingredients together 3 times.
Add alternately to creamed mixture, the dry ingredients and the milk.
Add cocoa mixture and vanilla.
Lastly fold in stiffly beaten egg whites.
Bake Inexpensive Cocoa Cake batter in prepared pans for allotted time.
Ice your cocoa cake with desired frosting.
