Almond Rhubarb Coffee Cake Recipe

I was raised on a farm with rhubarb growing right outside our back door, so to me this is just a staple when it comes to baking. Almond Rhubarb Coffee Cake, a moist golden cake that stirs up quickly and is long on old-fashioned flavor.

1 1/2 cups Packed brown sugar
2/3 cup Vegetable oil
1 Egg
1 tsp Vanilla extract
2 1/2 cups All purpose flour
1 tsp Salt
1 tsp Baking soda
1 cup Milk
1 1/2 cups Rhubarb, chopped
1/2 cup Sliced almonds

Almond Topping

1/3 cup White sugar
1 Tb Butter, melted
1/4 cup Sliced almonds

Oven Temp ~ 350°
Baking Time ~ 30 to
Pan Type ~ two 9 inch round pans

Rhubarb Coffee Cake Directions:

Preheat oven, grease the cake pans.
In a large bowl beat the brown sugar, oil, egg and vanilla together until smooth. Combine flour, salt and baking soda. Add to sugar mixture alternately with milk.
Beat until smooth.
Stir in rhubarb and 1/2 cup almonds.
Pour into prepared pans.

Coffee Cake Topping:

In a small bowl combine white sugar and butter or margarine.
Stir in 1/4 cup almonds. Sprinkle topping over batter.
Bake Almond Rhubarb Coffee Cake until cake is done.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Cake Flour:

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
