Homemade Apple Coffee Cake Recipe

I love baking this apple coffee cake, it's quick to mix up and makes wonderful gifts for friends or relatives. Apple harvest season to me is all about baking, canning and storing, sharing of the bounty and getting ready for the holidays. Homemade Apple Coffee Cake is always a welcome treat for everyone.

Home Made Apple Coffee Cake on a cutting board

3 Apples chopped into 1/2 inch chunks
1/2 cup Butter or margarine
1 1/2 cups Sugar
2 Eggs
1 cup Milk
3 cups All purpose flour
1 tsp Salt
3 tsp Baking powder

Crumb Mixture

1/2 cup Flour
1/2 cup Sugar
1 tsp Cinnamon
Dash Nutmeg
1/4 cup Butter or margarine

Oven Temp ~ 350°
Baking Time ~
Pan Type ~ 9 x 13 inch pan or two loaf pans
Preheat oven, grease your pan.

Cream the butter and sugar together. Add eggs and milk. Sift dry ingredients together. Stir into creamed mixture. Stir in about 1/2 of the chopped apple chunks. Pour Apple Coffee Cake batter into prepared pan.
Top with remaining chopped apples. Sprinkle crumb mixture evenly over top. Bake homemade apple cake till done.

For Crumb Mixture

Mix flour, sugar, cinnamon and nutmeg together. Cut butter into above mixture until crumbly.

For a little more pizzazz in your coffee cake experience, drizzle with Easy Glaze.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
