You know how great those giant blueberry muffins taste, well we have created one very large Blueberry Muffin Cake to share with a friend or maybe a few friends. Made with 100% whole wheat flour and antioxidant rich blueberries for a little added nutrition.
1/2 cup Whole Wheat flour
1 cup White flour
1 tsp Baking powder
1 Grated rind of orange
3/4 cup Light brown sugar
1 cup Blueberries or bilberries
1/2 cup Milk
2 Tb Melted butter
Milk to glaze
Some brown sugar
Oven Temp ~ 425°
Baking Time ~
Pan Type ~ 8 inch round pan
Sift together the flour, salt and baking powder.
Stir in the orange rind, sugar and blueberries. Whisk the eggs, milk and butter together. Stir the liquid mixture into the dry mix and mix well.
Transfer blueberry cake batter to prepared pan.
Place pan in oven above the center rack.
Bake Blueberry Muffin Cake till done.
Remove the cake from oven, glaze with milk and sprinkle with the brown sugar.
Return to oven, bake for another 5 minutes.
Serve blueberry cake warm or cold.
