Blueberry Muffin Cake Recipe

White flour
Salt
Baking powder
Grated rind of orange
Light brown sugar
Blueberries or bilberries
Eggs
Milk
Melted butter |

Oven Temp ~ 425°
Baking Time ~ 35 Min.
Pan Type ~ 8 inch round pan |
Preheat oven and Line a
cake tin with cake liner or greaseproof paper.
Sift together the flour, salt & baking powder.
Stir in the orange rind, sugar & berries. Whisk the eggs, milk & butter
together. Stir the liquid mixture into the dry mix & mix well.
Transfer to the prepared pan.
Place pan in oven above the center rack, Bake.
Remove the cake from the oven, glaze with milk & sprinkle with the brown
sugar.
Return to oven to bake for another 5 mins.
Serve warm or cold.
