Chocolate Treasure Mini Raspberry Cakes Recipe

Made with Nestle's evaporated milk and raspberries for a fruity cupcake with a chocolate treasure in the middle. Watch as their eyes light up when they bite into these yummy morsels.

3/4 cup Granulated sugar
1/2 cup Butter, softened
2 Eggs
1/4 cup Nestle - Carnation Evaporated milk
1 tsp Vanilla
1 cup All purpose flour
1/4 tsp Salt
1 cup Raspberries
10 Chocolate Crème Nestle Treasures
2 Tb Powdered sugar, optional

Oven Temp ~ 350°
Baking Time ~ 20 to
Pan Type ~ muffin pan
Preheat oven, grease 10 muffin cups.

Beat granulated sugar and butter in large mixer bowl until combined. Add eggs, evaporated milk and vanilla extract, beat until blended. Stir in the flour and salt. Gently fold in raspberries. Spoon heaping tablespoon batter into prepared cups, place 1 Nestle Treasure in each cup, pressing down slightly. Spoon heaping tablespoons of chocolate raspberry cakes batter over each Nestle Treasure, covering completely.
Bake Chocolate Treasure Mini Raspberry Cakes until cakes are golden brown around edges and top is set. Cool in pan on wire rack for 10 minutes. Run knife around edges to loosen, gently invert onto serving plate. Sprinkle chocolate raspberry cakes with powdered sugar, serve warm.
Makes 10 mini raspberry cakes.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
