7 Grain Oatmeal Cake Recipe

Delicious and healthy 7 Grain Oatmeal Cake recipe made with maple syrup and cooked 7 grain cereal. The cake turns out sweet and moist, what a way to have breakfast. Serve with apple butter or honey.

1 cup Canola oil
2 cups Maple syrup
1 1/2 tsp Vanilla
2 cups Unbleached white flour
3/8 cup Soy flour
1/2 cup Cold water
1/2 cup Soy milk
1 1/2 tsp Grated lemon rind
1 1/2 tsp Sea salt (optional)
3 Egg whites
2 tsp Cinnamon
2 tsp Baking powder
1 cup Cooked 7 Grain cereal
5 cups Rolled Oats
1/2 cup Raisins (optional)
1/2 cup Chopped nuts

Oven Temp ~ 350°
Baking Time ~ 50 -
Pan Type ~ 13 x 9 inch cake pan
Preheat the oven and oil cake pan.

Cream together the Canola oil, maple syrup and vanilla, set aside.
Mix the flour, soy flour, water, soy milk, lemon rind, sea salt, egg white, cinnamon and baking powder, mix until smooth.
Mix these two mixtures together, add in the cooked 7 Grain Cereal, rolled oats, raisins and nuts. Mix well. Bake 7 Grain Oatmeal Cake until top is golden brown.
This cake is not a very sweet. May be served with apple butter, honey or homemade preserves.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
