Kentucky Jam Cake Recipe

This Kentucky cake recipe is very moist and delicious.
You might want to go a little lighter then I did with the caramel frosting, this Kentucky Cake is as sweet as your homemade jam preserves.

Kentucky Jam Cake, the whole cake on clear glass cake plate

1 3/4 cups Flour
1 1/2 cups Sugar
1 cup Salad oil
1 cup Buttermilk
1 cup Blackberry jam
1 tsp Baking soda
1 tsp Baking powder
1 cup Chopped nuts
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Allspice
1 tsp Vanilla
1/2 tsp Cloves
1/2 tsp Salt
3 Eggs

Caramel Frosting

1 stick Butter
1 1/2 cups Brown sugar
1/3 cup Cream
1 1/2 cups Confectioner's sugar

Oven Temp ~ 350°
Baking Time ~ 35 -
Recipe Pan Type ~ two 9 inch round pans
Preheat the oven, grease and flour your pans.

Mix all Kentucky jam ingredients together and beat. Fill pans with Kentucky cake batter and then bake. Cool cake completely before adding the caramel frosting.

Kentucky Jam Cake Frosting

Combine first 3 ingredients. Bring to boil for 2 minutes. Sift sugar in and beat into Kentucky Jam frosting.

Recipe Note: Kentucky jam cake is not lacking in the sweet department. It's as sweet as your homemade jam preserves.
