This Oatmeal Cookie Cake is baked more like a brownie. Oatmeal cake is chewy and moist. Best of all, filled with Craisins and topped with chocolate.
1/2 cup Butter
1/2 cup Cream Cheese
1 cup Brown Sugar firmly packed
1/2 cup Granulated Sugar
1 tsp Vanilla
1-1/2 cups All purpose Flour
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Salt
3 cups Old Fashioned Oats
1 cup Craisins or Raisins
1 cup Chocolate Chips, semi-sweet
Oven Temp ~ 350°
Baking Time ~
Pan Type ~ 9 x 13-inch cake pan
Beat together the butter, cream cheese and sugars until creamy.
Add eggs and vanilla, beating well.
Combine the flour, baking soda, cinnamon and salt, mix well. Add to the creamy mixture.
Stir in the oats and craisins, mix well. Pour into prepared pan.
Bake Oatmeal cookie cake at suggested temperature for 25 minutes. Remove cake and cover top with chocolate chips. Return Oatmeal Cookie Cake to oven for the remainder of time.
Remove cake from oven and let set for 1 minute.
Spread chocolate with the back of a wooden spoon for frosting.
Serve your Oatmeal Cookie Cake warm with a scoop of vanilla ice cream.
