Peanut butter cake with chocolate and peanut butter frosting (Oh My). I filled this one with a raspberrry jelly center, making it a peanut butter and jelly cake. All of my favorite flavors all rolled up in one fantastic tasting cake.
2 cups Sifted all-purpose flour
1 1/2 cups Sugar
2 1/2 tsp Baking powder
3/4 tsp Salt
1/2 cup shortening, room temperature
2/3 cup Milk
1/4 cup Milk
2 Tb Peanut butter
Chocolate Peanut Butter Frosting6 ounce Chocolate chips
1/2 cup Butter or margarine
1/2 cup to 3/4 cup Sifted confectioners sugar
1 1/4 cups Peanut butter
Raspberry Jelly Filling2 cups fresh or frozen raspberries
1 cup sugar
2 tablespoons cornstarch
Oven Temp ~ 350°
Baking Time ~ 25 -
Pan Type ~ two 8 inch cake pans
Sift dry ingredients together in a large bowl. Add shortening and milk, beat
for 2 minutes at medium speed with an electric mixer. Add eggs and milk,
beat for 1 minute. Add peanut butter to batter, beat at low speed until
Divide Peanut Butter Cake batter equally between the pans and bake.
Remove from pans and let cool on racks.
Spread 1/4 cup your favorite peanut butter on one of the cake layers, while cake is still warm.
After cakes have cooled, spread raspberry jelly filling over the peanut butter and place second layer on top.
Frost with Chocolate Peanut Butter Frosting, recipe is below.
Melt chocolate chips and butter in a double boiler. Add confectioners sugar and peanut butter, beat until smooth. Chill frosting for about 15 minutes or until frosting is proper spreading consistency.
