Vanilla Bean Cream Cheese Frosting Recipe

Red Velvet Cupcakes with swirl and sprinkles with vanilla frosting

Have you ever made something so good you even impressed yourself? That’s how I feel about this vanilla frosting recipe. And it doesn't hurt that it was frosting the tops of famous Red Velvet Cupcakes.

11 ounce Cream cheese, at room temperature
2 sticks (1 cup) Butter, softened
1 Vanilla bean, split lengthwise
3/4 cup Confectioners' sugar, sifted

Vanilla Frosting Directions:

In a medium mixer bowl, beat the cream cheese until light and fluffy. With the mixer on low speed, gradually beat in the butter until well blended, about 4 minutes.

Scrape seeds from the inside of the vanilla bean into mixture, discard vanilla bean pod. Sift in the confectioners' sugar and continue to beat on low speed, scraping bowl frequently until well blended, about 2 minutes. Refrigerate vanilla frosting until ready to use, but do not let harden.
