Apple Cakes are so easy to mix up. In winter, after the apple harvest has finished. I make up Apple Cakes using the apples that I canned from harvest season. I can my apples with the sugar and cinnamon already mixed in; makes it quick and easy to have an apple pie or Apple Cakes.
6 Apples, peeled and sliced
1 Tb Vanilla
6 Tb Sugar
1 Tb Baking powder
1 Tb Cinnamon
1 cup Coconut oil
2 cups Sugar
3 cups Flour
Oven Temp ~ 375°
Baking Time ~
Pan Type ~ Bundt Pan
Mix the sugar, baking powder and cinnamon together in small bowl.
Toss the apples with the sugar, cinnamon mixture, until coated.
Add vanilla, toss again. Let stand.
In a separate bowl, beat the eggs.
Blend in oil.
Gradually add sugar.
These 3 steps can be done with a mixer or by hand,
but it is easier to use a mixer!
Stir in flour until thoroughly blended.
Fold in the apple mixture.
Pour Apple Cakes batter into greased bundt or angel cake pan.
Bake Apple Cakes until toothpick inserted comes out clean.

Use that kitchen for a workout track.
And when you're out of breath and panting.
Pot holders around your prize.
Jog to the nearest 90 pound neighbor
And leave her your 1000 calorie surprise!
