Fresh Apricot Cake Recipe

Fresh Apricots, thinly sliced (2 cups)

Oven Temp ~ 350°
Baking Time ~ 40 to 45 min

Preheat oven, grease pan.
Mix flour, baking powder and salt in medium bowl;
set aside. Beat butter and 3/4 cup sugar in large bowl with electric mixer
on medium speed until light and fluffy. Add eggs, one at a time, beating
well after each addition. Blend in extract. Add flour mixture; beat just until blended.
Spread into prepared pan. Top with apricot slices; sprinkle with 1 Tb sugar.
Bake until toothpick inserted in center comes out clean. Cool completely.
