Summer is the time to enjoy all the fruits of our labor. The apricot trees are all in bloom and life is good on the old farm. Fresh apricots paired with sliced almond make this one amazing tasting apricot cake.
1 cup Flour
1 tsp Baking powder
1/8 tsp Salt
1/2 cup Butter, softened
3/4 cup Sugar
2 Eggs (fresh eggs are best)
1/4 tsp Almond extract
4 Fresh Apricots, thinly sliced (2 cups)
1 Tb Sugar
Oven Temp ~ 350°
Baking Time ~ 40 to
Pan Type ~ 9-inch round cake pan
Mix the flour, baking powder and salt in medium bowl,
set aside. Beat butter and 3/4 cup sugar in large bowl with electric mixer
on medium speed until light and fluffy. Add fresh eggs one at a time, beating
well after each addition. Blend in extract. Add flour mixture, beat just until blended.
Spread apricot cake batter into prepared pan. Top with fresh apricot slices, sprinkle with 1 tablespoon sugar.
Bake Fresh Apricot Cake until toothpick inserted in center comes out clean. Cool cake completely.
