Blueberry cake is a nice, tender, melt in your mouth cake, one of my Mom's specialties from years ago. It's a great cake to take along to a picnic.
2 Eggs, separated
1 cup Sugar
1/2 cup margarine, softened
1/4 tsp Salt
1 tsp Vanilla
1 1/2 cups Flour sifted
1 Tb Flour, to coat berries
1 tsp Baking powder
1/3 cup Milk
1 1/2 cups Fresh blueberries
Cinnamon sugar, for topping
Oven Temp ~ 350°
Baking Time ~
Pan Type ~ 8 x 8 inch pan
Beat egg whites until stiff. Beat in 1/4 cup of sugar. In
another bowl cream the margarine with the salt, vanilla and remaining sugar.
Add egg yolks and beat until creamy. Sift the flour with baking
powder. Add alternately to creamed mixture with milk. Fold in beaten egg
whites. Coat the blueberries with 1 tablespoon of flour and then fold into
mixture. Turn blueberry cake batter into pan. Sprinkle cinnamon sugar on top.
Bake melt in your mouth cake. Cool on rack. Wrap any leftovers and store in refrigerator. Melt in your Mouth Blueberry Cake may be frozen at this point.
