Peach Upside Down Cake Recipe

The tender taste of fresh peaches right from the tree scream Peach Upside Down Cake. These cakes are so easy to make and have such an appealing look to them, it's a wonder they are not asked for more often. Who doesn't love a warm from the oven peach cake with cream on it?

5 Tablespoons Butter
4 Tablespoons Brown Sugar
1/4 tsp Grated nutmeg
2 cups Peaches, sliced thin
1 tsp Fresh lemon juice
1 1/3 cups Cake flour
3/4 cup sugar
1 3/4 tsp Baking powder
1/4 tsp Salt
3 Tablespoon Butter
1/2 cup Milk
1 tsp Vanilla extract
1 Egg

Oven Temp ~ 375°
Baking Time ~
Cake Pan Type ~ 8 inch round cake pan
Preheat the oven.

Melt the 5 tablespoons of butter in an 8-inch round pan. Add brown sugar and the nutmeg, blend well. Remove the pan from heat and arrange peach slices, slightly overlapping them on the brown-sugar mixture. Sprinkle the peach slices with lemon juice.

Sift the flour with the sugar, baking powder and salt. Stir the butter to soften it, then mix with the flour mixture. Add in the milk and vanilla extract.
Mix until the flour is dampened.

Beat the cake batter for two minutes with an electric mixer at medium speed, or beat for 300 strokes by hand. Add the egg and beat for one minute longer with mixer, or 150 strokes by hand. Pour the batter over the peaches.

Bake Peach Upside Down Cake for suggested time. Cool peach cake in pan for five minutes and then invert onto a serving plate. Let stand for one minute more before lifting off the pan. Serve peach cake while still warm.
