The combination of almonds and plums makes this upside down cake plum delicious.
3/4 cup (1-1/2 sticks) Butter, softened and divided
1 cup Sugar, divided
1 pound (2-1/2 cups) Fresh plums, sliced
2 Tablespoons Sliced almonds
1/4 tsp Almond extract
1 cup Flour
1 Tablespoon Baking powder
Oven Temp ~ 350°
Baking Time ~ 40 to
Pan Type ~ 9-inch round cake pan
Melt 1/4 cup butter in a small saucepan over medium heat.
Add 1/4 cup of the sugar; cook for 1 minute or until sugar is completely dissolved, stirring occasionally. Pour into cake pan. Arrange plums around bottom of pan, sprinkle with almonds. Set aside.
Beat remaining 1/2 cup butter and remaining 3/4 cup sugar into medium bowl with electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Blend in extract. Add flour and baking powder, beat just until blended. Gently spread over plums.
Bake until toothpick inserted in center comes out clean. Immediately run knife or metal spatula around rim of pan to loosen cake; invert onto serving plate. Cool plum upside down cake completely before cutting into 12 slices to serve.
