Rhubarb Pudding Cake

There is no shortage of rhubarb in my cupboards, so I am always looking for new recipes to try.
I found this one in an old cookbook that belonged to my mom. The bottom has a pudding like texture, while the top crust has a crunchy glaze created by sprinkling sugar and cornstarch mix over it before baking.

2 cups chopped rhubarb
1 3/4 cup sugar, divided
3 tablespoons butter, softened
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup sifted flour
1 tablespoon cornstarch
2/3 cup boiling water

Oven Temp ~ 375°
Baking Time ~ 45 to
Pan Type ~ 9 inch cake pan
Preheat oven, spray pan with cooking spray.
Cover the bottom of an 8 or 9 inch square pan with fruit.
Mix 3/4 cup sugar, butter, baking powder, salt, extracts, milk and flour together, you can add a little more milk if it is too thick to pour. Pour over fruit.
Mix remaining sugar and cornstarch, sprinkle over mixture in pan. Pour boiling water over the top.
(The water will soak down into the fruit at the bottom to form the pudding.)
You can see from the photo,that the sugar topping creates a glaze on the top of the cake, something like a creme brulee, as well as creating the pudding at the bottom.
You can serve warm in a bowl with ice cream, or let it cool a bit, slice and invert on your plate to show off the pudding.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

When Mixing Cake Batter:

You cannot over beat the eggs, sugar and butter, but you can over beat the flour. If you do, gluten will form and you will be making a quick bread instead of layer cake. Beat the flour just until there are no visible signs of dry flour, but not until the batter is completely smooth.

Cake Flour:

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
