Rhubarb Upside Down Cake Recipe

Well, this rhubarb upside-down cake is not the upside down cake you'd remember having as a kid. Unless your mom is like mine, she had rhubarb growing in the back yard. I think the reddish variety rhubarb looks a lot prettier, but green rhubarb will work just fine. After all, it's how it tastes that really counts.

Rhubarb Upside Down Cake in a Heart Shape

3 cups Sliced fresh rhubarb (1/2 inch slices)
1 cup Granulated sugar
2 Tablespoons All-purpose flour
1/4 tsp Ground nutmeg
1/4 cup Butter or margarine, melted

Upside Down Cake Batter

1 1/2 cups All-purpose flour
3/4 cup Granulated sugar
2 tsp Baking powder
1/4 tsp Salt
1/2 tsp Ground nutmeg
1/4 cup Butter or margarine, melted
2/3 cup Milk
1 Egg

Sweetened whipped cream (optional)

Oven Temp ~ 350°
Baking Time ~
Pan Type ~ greased 10-inch cast iron skillet
Preheat the oven.
Sprinkle rhubarb in a greased 10-inch cast iron skillet. Combine sugar, flour and nutmeg, sprinkle over rhubarb. Drizzle with butter.

Combine the flour, sugar, baking powder, salt and nutmeg in a mixing bowl. Add butter, milk and egg, beat until smooth. Spread over rhubarb mixture. Bake rhubarb upside down cake until the cake tests done. Loosen edges immediately and invert onto serving dish, creating a beautiful rhubarb upside down masterpiece.

Serve rhubarb cake warm and topped with ice cream of your choice.
