Christmas Special Recipe

An adopted recipe, I have made this Almond Coffee Cake ahead when having company over, makes for an easy breakfast. This almond coffee cake makes a wonderful special Christmas treat to share with friends.
A great moist coffee cake.

1 cup regular flour
1 stick (1/2 cup) butter
2 Tablespoons cold water
1 cup water
Coffee Cake Batter
1 stick (1/2 cup) butter
1 cup regular flour
4 eggs
2 Tablespoons almond flavoring
1/2 cup almonds (sliced)
1 cup Red and Green glazed cherries

powdered sugar *
milk*


Oven Temp ~ 375°
Baking Time ~
Recipe Pan Type ~ pizza pan
Almond Coffee Cake Crust Directions:

Spray pan with non-stick cooking spray.

In a large bowl cut together the flour and butter until mixture resembles course flour. Add water and mix into a ball.
Place onto pizza pan and pat your crust until pan is covered.
Set aside.

Christmas Almond Coffee Cake Directions:

Heat butter and water in large sauce pan, bring to a boil.
Add flour all at once and beat until it forms a ball.
Remove from heat and beat in eggs, one at a time.
Pour almond coffee cake mixture over the crust and bake.
Remove coffee cake from oven and drizzle with glaze made from powdered sugar and milk.
Top with almonds and cherries.

* mix enough powdered sugar and milk together until it reaches drizzling consistency.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

When Mixing Cake Batter:

You cannot over beat the eggs, sugar and butter, but you can over beat the flour. If you do, gluten will form and you will be making a quick bread instead of layer cake. Beat the flour just until there are no visible signs of dry flour, but not until the batter is completely smooth.

Cake Flour:

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
