Cranberry Cake Recipe with Vanilla Sauce
Taking advantage of the cranberry season. A little sweet, a little
tart, and very healthy for your heart.

Sugar
Light brown sugar
All-purpose flour
Baking soda
Fat-free evaporated milk
Fresh cranberries, chopped,
or 1 1/2 cups dried cranberries
Chopped walnuts (optional)
Sugar
Fat-free evaporated milk
Margarine
Vanilla extract

Baking Time ~ 20 to 25 Min.

Preheat the oven, coat a baking pan
with nonstick cooking spray.
In a large mixing bowl, beat the
margarine, sugar, and brown sugar. In another bowl mix together the flour
and baking soda. Gradually add the flour mixture to the margarine mixture
alternately with the milk. Mixing thoroughly after each addition. Fold in
the cranberries and walnuts, if desired. Pour the Cranberry cake batter into
a prepared
baking pan. Bake cake until the top springs back when touched. Cut the
Cranberry cake into squares,
and serve warm with Vanilla Sauce.
Vanilla Sauce Recipe
In a small saucepan combine the sugar, evaporated milk, and margarine. Bring to a boil. Boil for 4 to 5 minutes or until slightly thickened.
Remove from heat, and stir in the vanilla. Serve warm over Cranberry
cake.
