Popcorn Cake Recipe

I made popcorn cake for my son and sent it to him when he was away at college. It's very versatile and you can change it around to suit your tastes. Instead of plain M&Ms, use the new flavored ones or peanut ones, add chocolate chips, or substitute almonds for the peanuts. You get the idea — make this your cake recipe! Be sure though, to use plain un-buttered, unsalted popcorn.

1/2 cup Margarine
1/2 cup Oil
1 pound Marshmallows
1 gallon Popped corn (popcorn)
1 pound Salted peanuts
1 pound M&M chocolate candies

Oven Temp ~
Baking Time ~
Pan Type ~ Bundt pan

Mix the margarine, oil and marshmallows, cook 1 minute. Lightly mix the popcorn, peanuts and candies together. Pour marshmallow mix over popcorn mixture and lightly mix. Pour into buttered Bundt pan and let stand for 1 hour. Do not cover popcorn cake. Cake in now ready to serve, cake is solid, so use a sawing motion to "cut popcorn cake."
Or just break it in pieces, it's your cake, do it how ever you want.

When Baking with Butter:

Room temperature butter in the cake batter is one of the biggest cake baking mistakes. In fact, butter must be below 68° to trap air molecules and build structure. Otherwise, the fat will liquefy and the cake will be flat. To get “cool” butter, cut the chilled butter into chunks and let it sit in a bowl for 5 minutes before beating.

Cake flour is milled from soft wheat that has a lower gluten content and higher starch content than all-purpose flour. It helps to ensure a fluffy texture in cakes and pastries. A substitute for cake flour is to use all-purpose flour, but reduce the amount by 2 tablespoons per cup.
