Preheat oven, grease and flour pan.
Combine first seven ingredients together in a saucepan.
Cook over medium heat, stirring occasionally, until apples are tender. Pour
into a prepared pan. Sift together the 2 1/4 cups flour, 2 teaspoons baking
powder, 1 teaspoon ginger, and 1/2 teaspoon salt. In a mixing bowl, cream
shortening and sugar; add eggs then beat for 1 minute.
Add alternately the milk and sifted dry ingredients. Place half of the
batter in a second bowl. Blend in the last 5 ingredients. Spoon light and
dark batters alternately over the apples.
Bake.
Invert onto a serving platter or rack covered with waxed paper. Serve warm or cold; top with whipped cream, if desired.
