Applesauce Spice Cake Recipe

Truly delicious and full of goodness, the applesauce used in the cake serves as part of the oil, keeping this cake moist with only half the fat.

Applesauce spice cake with whipped cream and raspberries.

4 1/2 cups Flour
3 cups Applesauce
2 cups Raisins
2 cups Chopped nuts
2 cups Sugar
1 ounce Unsweetened chocolate, grated
2 tsp Baking soda
1 cup olive oil
2 Eggs, beaten
1 tsp Vanilla
1 tsp Cinnamon (spice)
1/2 tsp Nutmeg (spice)
1/2 tsp Allspice (spice)
1/4 tsp Ground cloves (spice)
1/2 tsp Salt

Oven Temp ~ 350°
Baking Time ~
Pan Type ~ 9 x 13 inch cake pan
Preheat oven, grease and flour cake pan.
In large bowl, sift together the flour, soda, spices and salt.
Stir in grated chocolate. Mix in the applesauce, olive oil, eggs and vanilla.
Stir in nuts and raisins.
Pour applesauce spice cake batter into prepared pan.
Bake spice cake until slightly brown on the top.
Cool cake in pan on cake rack.
