This banana spice cake is just the right size for a small family.
Serve banana spice cake with Peanut Butter Cream frosting. Enjoy as a snack cake or dessert.

1/2 cup Butter, softened
3/4 cup Light brown sugar, firmly packed
1 Large Egg
2 to 3 Bananas, mashed
1/4 cup Buttermilk or sour milk
1 tsp Vanilla extract
1 1/2 cups All-purpose flour
1 1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Salt
1 tsp Cinnamon (spice)
1/8 tsp Cloves (spice)
1/8 tsp Nutmeg (spice)

Oven Temp ~ 350°
Baking Time ~ 25 to
Pan Type ~ 8 or 9 inch square cake pan
Preheat oven, grease and flour cake pan.

In a large mixing bowl with electric mixer, cream the butter and brown sugar. Beat in the egg, milk, vanilla and mashed bananas until well blended.
Combine the flour, baking powder, baking soda, salt, cinnamon, cloves and nutmeg. Stir the dry ingredients into the creamed mixture until moistened. Spread banana spice cake batter into prepared pan. Bake until cake springs back when lightly touched with finger.
Frost with a Peanut Butter Cream frosting or sprinkle with powdered sugar.
