Diabetic Spice Cake Recipe

Eggs
Oil
Self-rising flour
Unsweetened applesauce
Sweetener (equal)
Water
Soda
Cinnamon
Allspice
Vanilla
Chopped nuts (optional) |

Oven Temp ~ 350°
Baking Time ~ 40 - 45 Min. Pan Type ~ 10 inch tube or bundt pan |
Preheat oven, greased and flour
pan.Cook raisins in the 2 cups
of water until dry. Let cool. Mix together in large bowl with beaten eggs,
and mix well. Add oil, allspice, applesauce and then flour.
(1 teaspoon of vanilla & 1/2 a cup of chopped nuts are optional.) Pour
mixture into prepared pan. Bake. Do not over cook or cake will be dry. It is
done when firm on top.
*Can also make into cupcakes but cut down on baking
time.
