Lady Fingers are used for lining moulds that are to be filled with whipped cream mixtures. They are often served with frozen desserts, and sometimes put together in pairs with a thin coating of whipped cream. Lady Finger sponge cakes are attractive for children' parties.
3 Egg whites
1/3 cup Powdered sugar
2 Egg yolks, beaten
1/3 cup Flour
1/8 tsp Salt
1/4 tsp Vanilla
Oven Temp ~ 350°

Beat egg whites until stiff and dry, add sugar gradually, continue beating. Then add
egg yolks, beaten until thick and lemon-colored, add vanilla. Sift the flour with salt;
add flour to batter and mix well.
Batter will be thick.
Using a pastry bag and tube, shape into oblong shaped cakes (four and one-half inches long and one inch wide), onto cookie sheet covered with parchment paper. Sprinkle with powdered sugar. Bake Lady Finger sponge cake in a moderate oven. Remove from paper with a knife.
